Today, we introduce unique traditional sushi made in the mountainous areas of Kochi Prefecture.
"Inaka zushi" is local food of Kochi that uses ingredients from the mountains instead of those from the ocean as sushi toppings.
The colorful topping ingredients include slices of bamboo shoots and shiitake mushrooms, which are right in season now, and Kochi's local products such as myoga ginger and "ryukyu" (a kind of taro stem). Each ingredient is placed on top of a small ball of rice flavored with "yuzu-su" ( juice of citrus yuzu) and shaped into sushi together.
What makes this sushi especially appetizing is its lovely appearance as well as the refreshing flavor of yuzu.
The different toppings are all very good, but bamboo shoot slices with their unique crunchy texture are particularly recommended!
